Our Challenge for Week #2

How did it go this week with the Eat More Fruits and Veggies Challenge?   Hopefully, you're eating more fruits and veggies than you were last year!    You can use the food log provided in December 29th's post to track your weekly progress by at least recording the number of servings of fruits and veggies you eat each day.

If you are just joining us with this challenge, that's okay because, as the saying goes, you just need 21 days to form a habit!

Starting Sunday, January 8th, your challenge is:

Beginners:   Eat 4 servings of fresh fruit and 5 servings of raw or cooked veggies a day;
Intermediates:  Eat 4 servings of fresh fruit and 5 servings of raw or cooked veggies a day; drink one 16 oz. glass of green smoothie each day with 2 to 3 cups of fresh fruit and at least, 1 cup of any leafy greens.
High Raw Achievers:  Drink a 16-18 oz. glass of green smoothie for breakfast and lunch, and eat a large salad with any homemade raw dressing for dinner.   At least once this week, prepare a fresh fruit salad using 4 to 5 fruits with raw almonds to replace a meal.  Drink a green smoothie or fresh vegetable juice as a meal.  Eat a large salad using dark leafy greens as the base and add red vegetables.  Use a raw dressing. 

Try these fruits and vegetables of the week:

Fruit of the Week:  pomegranite, grapefruit, grapes
Veggies of the Week:  romaine lettuce, cabbage, red peppers

My celebration....I have not had a diet soda in 6 days.....yahoo!

Having at least one smoothie per day......another yahoooooo!

Thank you for this information. I have been drinking fresh carrot and apple juice for 6 days now. I do this in the morning and eat food during the day.
Today I realized I need some type of plan on how to increase my raw food. So, thank you for sharing this plan!

Momma, do you have any tips for preparing the carrots for juicing in a quick way? I would love to juice carrots daily like you, but preparing the carrots for juicing has become time-consuming, especially when juicing for the entire family. I started adding apples with the carrots and the kids love the combination!

No soda for 6 days and green smoothies, instead? You're doing great, Jeannie. Keep up the good work! I fixed a green smoothie today with dino kale, baby spinach, 1 banana, 2 oranges, and a package of frozen blueberries and enjoyed it so much. I actually crave green smoothies now and try to drink them daily. Whenever I buy greens, I can't bring myself to cook them any more, but eat them raw!

Jeannie, be thankful that you were able to kick the soda-drinking habit for at least a week and drink green smoothies instead! Did you hear the story about the mouse that was found in the soda and how the soda acid dissolved the mouse?

Ok... So, I put the juicer front and center on my kitchen counter! Carrots and spinach juice a day - with , or without an apple or two! It's taking me time to transition back to 95% raw; but, remembering how I felt in 2010 (my 95% raw experience)keeps me trying to kick the cooked food lifestyle.
