During this first week of April, let's share simple, tasty plant-based recipes that use whole wheat, oats, and/or whole grain cornmeal.

To get us rolling, here's a recipe for Buckwheat-Oat Pancakes:
Blend until smooth:
2 1/4 cups water
1 1/2 cups rolled oats
1 tbsp. cold-pressed extra virgin olive oil
1/2 cup whole grain light buckwheat flour (You can grind buckwheat groats in the Vita-Mix!)
1/4 cup whole grain yellow cornmeal
1/2 tsp. salt
Cook on a hot skillet as you would any pancakes and enjoy!
